This estate takes the name of Don Valentin’s wife and there is an antique house which belonged to Elsa’s parents. Rama Caida is one of the coolest areas in San Rafael. Winemaking Process Manual harvesting and fermentation of crushed grape inoculating with selected yeasts in stainless steel tanks at a controlled temperature. Smooth and periodic pump-overs of wine during the fermentation period, separation of liquid from the solids and pressing, usually the wine obtained trough free drainage is used with a touch of wine from the press at very low pressure to improve structure and complexity. Natural stabilization in stainless steel tanks before the blends are made and finally bottling.
Oenological Characteristics Classic Cabernet aromas of black pepper, cedar, slight herbal and berry notes manifest themselves in the nose. This is a medium-full bodied wine with a soft balanced mouth feel and flavours that are similar to the aromas, which lead to a pleasing soft berry-vanillan finish.
Serving Temperature : The ideal is around 20ºC.
