WINEMAKER COMMENTS
Fully ripened Shiraz grapes were chosen from arguably the best areas in Australia for this variety – McLaren Vales and Barossa Valley. Long, slow fermentation in old, open fermenters allowed complete extraction of the rich blackcurrant flavours, without over extraction of harsh tannins. Soft pressings were then added back to the free run to ensure a full rich palate feel. The wine was then matured in American oak barriques for about 15 months to add another dimension.
This richly flavoured wine is ideal with game meats, beef or casseroles, as well as matured cheeses.
