WINEMAKER COMMENTS
Fully ripened Chardonnay grapes from three regions were harvested at night when cool to allow skin contact and extraction of the typical peach and melon characters evident in this variety. Cool fermentation in both barrel and stainless steel followed by short maturation on yeast lees and malolactic fermentation in about 20% of the final blend, has resulted in a complex, richly flavoured wine or great length, lingering flavour and light fresh oakiness.It is delightful served with rich fish dishes, creamy soups, chicken, veal and salads or drunk on its own purely for its sheer refreshing and mouth filling tropical flavours.
