Grape Variety: 100% Cabernet Sauvignon

Harvest: Hand-harvested from dry-farmed, old vines in April 1995.

Vinification:

The must was fermented for 15 days at 82ºF followed by a 15-day post fermentation maceration. All the wine was aged for 12 months in French oak barrels followed by 6 months of bottle ageing. Bottled in September 1997.

pH: 3.73

Acidity: 3.2g/l (Sulfuric Acid)

Residual Sugar: 2.0 g/l

Tasting Notes:

A deeply colored, rich, round and supple wine, while approachable now, is capable of ageing in the bottle for several years.
