Harvest: Hand-harvested in April 1995.

Vinification:

The must was fermented for 15 days at 82ºF followed by a 15-day maceration period. All the wine was aged for 14 months in French oak barrels and given 4 months bottle age prior to release. Bottled in August 1996.

pH: 3.53

Acidity: 3.2g/l (Sulfuric Acid)

Residual Sugar: 0.16%

Tasting Notes:

This is a beautifully balanced wine, with soft tannins and rich, mature, complex fruit. Deep color and spicy character result from low-yielding, non-irrigated vines. This wine may be enjoyed now or cellared for several years.
