Vinification: The gpes are harvested by hand. The grapes are carefully sorted and stalked before being pressed gently to extract the juice. The juice is fermented

for a period of twenty eight to thirty days in temperature controlled stainless steel cuves at a temperature of 30ºC. After this period the wine is transferred in to oak barrels, one third of which are renewed each year and develops for between 18 and 20 months. After the wine is bottled at the chateau and stored in the cellars until such time as the wine is released on to the market.

 

Accompanies: This wine is excellent with both red and white meats, game and cheese.

 

Remarks: A wine of excellent quality. A deep ruby colour, with purple tinges. On the nose there is ripe red fruits and vanilla. On the palate the wine is well-structured with quite a lot of tannins…. noble tannins which will ensure an harmonious and long development. A wine to buy and keep for five to fifteen years.
